My version of meal planning is to pick 5-6 recipes that I'd like to cook in a week and then play it by ear on which day we eat what. I usually stick to my plan about 60% of the time. Some days whatever I’ve decided on doesn’t sound very good or I realize we’re missing an ingredient that I would swear that we had on hand or the lazies strike and we eat a frozen pizza. I’m hoping that putting my ideas out here for my public audience of one to three readers will help keep me honest and hopefully inspire me to actually follow my plan.

Whole lotta focacc
I made focaccia again this week. And for the second week in a row, I've been blown away by how simple yet delicious this bread is. It only takes about 15 minutes of effort and no kneading!
Big salad + focaccia + roasted pepper and sun-dried tomato aioli (I subbed jarred peppers for fresh) + Costco pollock burger (stick with the salmon ones - much better) = delicious
Look at those sweet garden helpers! I picked a few leaves of lettuce and two berries. Not much, but the puppies were excited! Barkley's adorable red lips look like he's been in the strawberry patch. Poor Thor is still wearing the cone of shame thanks to an eye injury. Keep your fingers crossed that it heals on its own and that he doesn't need to have surgery.
This week's eats
I'm really thinking about enchiladas today. Like a lot a lot. We might need to have enchiladas tonight. I like making them with this enchilada sauce recipe.
It's been a while since we've made fried rice. I've got a freezer full o' leftover rice and random veggies that need to be eaten, so that sounds like a winner winner for one night's dinner.
Darn! I think I'm going to have to make the focaccia again so we can have salmon burgers with it. I'm so not mad about it.
