I'm on a roll | Tasty Tuesday Update

My version of meal planning is to pick 5-6 recipes that I'd like to cook in a week and then play it by ear on which day we eat what. I usually stick to my plan about 60% of the time. Some days whatever I’ve decided on doesn’t sound very good or I realize we’re missing an ingredient that I would swear that we had on hand or the lazies strike and we eat a frozen pizza. I’m hoping that putting my ideas out here for my public audience of one to three readers will help keep me honest and hopefully inspire me to actually follow my plan.

Here's what we ate last week

 Roasted veggies are healthy and delicious! Great for a side dish or in a heated up in wrap and topped with feta for lunch. Here's rainbow chard, mushrooms, onions, beets, and radishes mixed with olive oil, salt and pepper, and chili powder ready to be popped in a 400 degree oven.

 My lettuce in the garden is producing nicely, but not quite enough for a weekly salad. So we've been having toppings heavy salads to make it enough for a meal. Here are cucumbers, radishes, tomatoes, bell peppers, and avocado ready to be mixed with mesclun.

 Hubby wanted oysters, so we made some oyster po boys. Breaded and fried oysters on rolls with lettuce and mayo, cole slaw, and some roasted, herby potatoes. Not the prettiest meal, but really quite tasty!

 We had a make your own sushi bar when we had my sister's family over. We had fab (imitation crab), tempura shrimp, and ahi tuna plus veggies and crunchies.

This week's plan

It's been too hot to make bread lately, but I think I'll brave it one morning this week. Focaccia freezes beautifully and will make a tasty dinner with kale balls from the freezer. 

I'm daydreaming again about yellow curry, so I think I'll whip up this shrimp version. It's so easy that you'll only occasionally think about ordering Thai food... and then decide to make this instead.

It might be time to make a bunch of lentil quesadillas for the freezer. Great for a lazy meal and would be easy to throw in the lunchbox for my husband's weekday meals.
