Salads + shrimp + hole foods | Tasty Tuesday Update

My version of meal planning is to pick 5-6 recipes that I'd like to cook in a week and then play it by ear on which day we eat what. I usually stick to my plan about 60% of the time. Some days whatever I’ve decided on doesn’t sound very good or I realize we’re missing an ingredient that I would swear that we had on hand or the lazies strike and we eat a frozen pizza. I’m hoping that putting my ideas out here for my public audience of one to three readers will help keep me honest and hopefully inspire me to actually follow my plan.

Here's what we ate last week

 Simple. Healthy. Delicious!   Baked fish with roasted onions, sweet potatoes, carrots, and farmers market beets and greens, plus cucumber and avocado salad

 My husband stopped for donuts. I couldn't resist. The dog couldn't either!  Barkley nearly grabbed this sweet treat out of my hand. Naughty, naughty boy!

 This roasted veggie and shrimp salad is so easy and delish. Toss veggies with s+p, olive oil, chili and garlic powders and roast in a 400 degree oven for 20-30 minutes, stirring a few times. Add shrimp to pan and similarly cover. Roast for 10 more minutes. Add to greens and top with avocado. Yum!

 Focaccia freezes beautifully. Take it out and defrost it and no one will ever know that you haven't slaved in the kitchen all day! Served with easy cheese broccoli cheddar soup

 Repeat focacc + repeat top (oops! 🤣 It's my fave) with delicious and cheesy zucchini gratin and freezer baked pasta with faux beef bolognese. Freezer meals for the win!

This week's plan

I've got lofty plans for meals this week:

My husband is craving fried oysters so some oysters I'll get at the grocery store for him to fry. Easy enough! We'll have these with cole slaw and smashed potatoes, and I'll make some fresh focaccia.

We have some kale balls in the freezer calling our name. We'll have these another night with leftover focaccia and a big salad. 

 The collard greens in my garden are out of control. I've been craving Ethiopian food for a long time, years maybe, so I'm going to try this recipe for  ye'abesha gomen  with this  lentil stew  and this  quick injera .

It's been a while since we've had yellow curry, so I think I'll whip up this shrimp version. It's so easy that you'll only occasionally think about ordering Thai food... and then decide to make this instead.

I've thought about making these lentil meatballs for a while. Maybe I'll finally get around to it!
