Tasty Tuesday Update

My version of meal planning is to pick 5-6 recipes that I'd like to cook in a week and then play it by ear on which day we eat what. I usually stick to my plan about 60% of the time. Some days whatever I’ve decided on doesn’t sound very good or I realize we’re missing an ingredient that I would swear that we had on hand or the lazies strike and we eat a frozen pizza. I’m hoping that putting my ideas out here for my public audience of one to three readers will help keep me honest and hopefully inspire me to actually follow my plan.

Mushroom lentil bourguignon with steamed potatoes → this was ok. I liked it but hubby was mixed on it. Not sure if I'd make it again.

Coconut curry lentils with rice and homemade naan → stocked the freezer with leftover lentils!

This week's eats

Salmon burgers from Costco with homemade focaccia + salad

Faux beef tacos and chips, salsa + guac → I buy the faux beef from Trader Joe's and here's the taco seasoning mix that I make. Super easy dinner for lazy nights!

Sushi burritos and miso soup

Sun-dried tomato tapenade with mo focaccia for Sunday Snackies → My husband and I try to keep Sundays low-key so we can spend quality time together. I like to make up a big tray of veggies, a dip, and some sweets so that we can snack on it while we watch a few shows on Sunday evening. Being ever creative, I call this Sunday Snackies. 

I'm also considering making summer rolls just so I can eat terrifying amounts of this peanut sauce
